This ancestral knowledge in a jar attempts to sustain the recipe for Gazan Pickled Ba'li Lemons a ritual threatened with extinction. Central to this ritual are the Ba'li lemons, deeply rooted heirlooms drawing water from Gaza's ancient aquifers, traditionally preserved with nigella seeds and fiery shatta peppers. Through the making of this spicy, distinct practice of Al-Mouna, we depict the vitality of Palestinian cuisine and the Indigenous act of preserving ancestral culinary rituals enduring colonial erasure. Each pickled jar is a potent symbol of profound resilience and culinary justice.
